Sunday Delivery (4 Meals):
- Vegetable Japchae
Carrot, Peppers, Spinach and Mushrooms with Korean Glass Noodles.
- Roasted Sweet Potato and Wild Rice Salad with Maple-Apple Cider Vinaigrette
Roasted sweet potato, wild rice blend, pickled red onion and toasted almonds over spinach salad mix. Served with a maple and apple cider vinaigrette.
- Calabacita Tacos with Scallion Rice And Black Beans
Calabacitas (Squash, corn, tomatoes and onions) with avocado salsa and almond queso Fresca. Served with corn tortillas, refried black beans and scallion rice.
- Red Lentil and Butternut Squash Curry
Red lentils, butternut squash and greens cooked together in a tomato and coconut milk curry. Served with rice.
Wednesday Delivery (3 Meals):
- Roasted Ratatouille Pasta
Tomatoes, onions, zucchini and eggplant roasted and tossed with brown rice pasta. Topped with plant Parmesan and basil.
- West African Peanut Stew
Velvety peanut stew with tomato and sweet potato and greens. Served with rice.
- Yukon Potato and Spinach Saag
Yukon gold potatoes, onions, spinach and spices simmered in a creamy cashew sauce. Served with basmati rice.
